Easy Crockpot Chicken Tacos

Oh, how I love when I find a time-saving trick to help me prepare a week-night meal! Last week, I started a new job that takes me into a different time zone in the wee hours of the day and back into my own time zone as I head home from a long day at the office. I am realizing that I will have to stock my fridge and freezer with lots of pre-made items and do lots of cooking on the weekends to keep up with things. The crock pot will probably continue to be my “go to” appliance when preparing easy meals for my clan..
Easy Crock-Pot Chicken Tacos can be popped into the slow cooker in the morning and be ready when the family is looking for something yummy for dinner. A good friend recently shared a variation of this recipe with me, I have added a few things to give the meal a little more kick. The first time I made the dish, I followed the recipe exactly as it was written. My children thought my initial attempt was too bland, so I changed a few ingredients to suit the family. This ooey-gooey meal tastes great packed into tortilla shells or it can be served with tortilla chips as a fun dip. Either way, it’s chocked with lots of vegetables and lean meat. Great for a light summer snack dip of served with beans and rice as a hearty cold weather meal.

East Crock-Pot Chicken Tacos

2 pounds chicken breasts, boneless and skinless
1 cup chunky salsa
1 cup Rotel diced canned tomatoes, drained
1 packet taco seasoning
1 cup onions, diced fine
1/2 cup celery, diced fine
1 1/2 cup shredded cheese
3 tablespoons sour cream (optional)

Place the chicken in a slow cooker. Sprinkle the taco seasoning over the meat then layer in the vegetables and the salsa. Pour a half cup water over the mixture, set on low and cook for 6-8 hours. Remove chicken and shred with two forks. Pour shredded chicken back into the salsa mixture; mix we to incorporate. When ready to serve, sprinkle with cheese and top with a dollop of sour cream.

Crispy Corn Flake (Baked) Chicken Strips

When I was in college, my roommate invited me to her hometown to spend the weekend with her family. My roommate’s mother was a wonderful cook, she prepared all kinds of goodies for us to munch on during out weekend visit. On Sunday afternoon, just before heading back to our college dorm, J’s mom prepared these delicious chicken strips with oven baked fries and a fresh garden salad. I thought the chicken was absolutely delicious. The meat was super tender, while the crust was flavorful and crunchy.
Years later, after I had graduated and was ready to start a family of my own, I asked J’s mom for this recipe. Oh, it’s so easy to make these strips…the oven baking eliminates the greasy mess that fried chicken leaves behind. Yet, these delectable strips are crispy and delicious. Once you try them, this might be the only way you prepare chicken for your family.

Crispy Cornflake Chicken Strips

4-6 chicken breasts, boneless and skinless
1/4 cup flour
1 teaspoon seasoning salt
1/2 teaspoon pepper
1/2 cup butter, melted
2 1/2 cups corn flake cereal, finely crushed

Preheat oven to 400 degrees. Spray a 15×11″ baking pan with non- stick cooking spray. In three separate mixing bowls, individually place the flour, butter, and corn flakes. Dip the chicken strips in the flour, then the butter, then the corn flake cereal. Place the coated chicken strips on a baking sheet.
Bake 20 – 25 minutes, until chicken is no longer pink. Serve with ketchup, BBQ sauce, or ranch dressing.

Kielbasa Skillet Meal

This is a standby recipe that I have used for years. Three simple ingredients make for a quick and easy skillet meal.
My mother-in-law used to make a variation of this recipe by using kielbasa, sour kraut, apples, and canned potatoes. The flavors seemed a bit strong for me and I am really not a big fan of sour kraut. When J and I started our own family, I altered the recipe to suit our tastes. I buy kielbasa when it’s on sale and store it in the freezer until ready to use. The sausage is pre-cooked so it cooks up fast.
A helpful tip…when baking potatoes, always bake a few extra to add to skillet meals like this one. Having pre-baked potatoes on hand is a real time saver. This one pot meal makes clean up a snap!

1-2 Hillshire Farms Polska Kielbasa, precooked rope link-style
1 medium onion, thinly sliced
3 medium potatoes, baked and cubed
Canola oil to coat pan

Preheat a large skillet and add 2 tablespoon of canola oil to the pan. Cut kielbasa into 1/2″ slices; set aside. Add sliced onions to the skillet and sauté until caramelized. Add cubed baked potatoes to the skillet; sauté until golden brown. Mix in the sliced kielbasa and continue cooking until thoroughly cooked through; about 10 minutes.

Crock Pot Italian Grinder

I saw this recipe as I was searching for an interesting sub recipe last week. This one caught my eye because it looked so unique. On Saturday, I loaded up the crock pot with a variety of similar ingredients to make a mighty tasty sandwich.
There were a few things that I might rethink next time, though. First off, I have to figure out a way to add more ingredients to each of the sandwich sections. While I packed in as much as would fit, the sandwiches seemed a bit skimpy when I separated them from the loaf. Other than that, this thing was great! I am going to try it again today now that I have finished my trial run.
Below, I have printed my recipe for the ingredients to be used for the crock pot grinder.

Crock Pot Italian Grinder

1 loaf of Italian Bread, unsliced
1/2 lb. sliced provolone cheese
1/2 lb. hard salami, thinly sliced
1/2 lb. Virginia ham, thinly sliced
1/2 lb. turkey pastrami, thinly sliced
Sliced onions
Sliced tomatoes
Sliced pepper rings, patted dry
1/2 tsp. oregano
Partially slice Italian loaf to resemble sandwich slices. (Do not cut through the bottom of the loaf). Layer sandwich meat, cheese, onions, tomatoes and peppers in individual piles.Sprinkle with oregano. On a cutting board, carefully pack each pile of ingredients into the sliced loaf making sure to fill only every other opening.
Double wrap the loaf in aluminum foil; making sure to fold and close edges firmly. Pour 1/2 cup water in the bottom of the crockpot. Place a heat proof bowl in the bottom of the pot to keep the sandwich above the waterline. The water will steam the sandwich as it cooks. Place the sandwich into the crockpot. Cover and cook on LOW temperature for 4 hours.

UPDATE:
Here’s another great combination

1/2 lb. provolone cheese, thinly sliced
1/2 lb. hard salami, thinly sliced
1/2 lb. Virginia Ham, thinly sliced
1/2 lb. pepperoni, thinly sliced
6 tablespoons Chicago style mild giardiniera, to spread over bread

I just finished making the grinder a second time and boy it turned out great! I added pepperoni to the sandwich meat slices and used mild, Chicago style giardiniera to spread on the bread instead of the onions and peppers…ooey, gooey, melted cheese and lots of Italian flavor.

Crazy Mixed-Up Caesar Salad

We are not a family that often eats out. I’d much rather make “copy-cat” restaurant favorites at home. Then, I can tailor the recipe to please the whole family ( for far less money). However, there are times when we are out and about and find ourselves in need of a meal.
A couple of years ago, we went to a new restaurant for a birthday celebration. My daughter ordered a salad that looked quite interesting. She was attracted to the notion that the salad included a few of her favorite foods…noodles, romaine lettuce, and Parmesan cheese. She was quite pleased with her choice and was not disappointed with her meal. As I looked at the salad, I realized that we were paying $9 or so for a Caesar salad with noodles in it. Shortly thereafter, I duplicated the salad in my kitchen and it has since become the only way I prepare Caesar salad for my family. Adding grilled chicken makes this tasty main-dish salad a hearty meal.

Crazy Mixed-Up Caesar Salad

3 small heads of romaine lettuce, chopped into bite-sized pieces
3/4 cup bottled Caesar salad dressing (I use Marzetti’s brand)
3/4 cup Parmesan cheese, shredded (I use Kraft or Sargento Brand)
1/4 cup water
1 16 oz box of noodles, fully cooked and cooled ( I use Ronzoni Smart Taste Brand)
Croutons
Pepper to taste

In a large serving bowl, mix romaine lettuce with fully cooked and cooled noodles. In a smaller bowl, mix 1 cup of dressing with 1/2 cup water to dilute the dressing, mix to combine. Pour dressing mixture over the lettuce and noodles. Toss to coat all of the ingredients. Sprinkle Parmesan cheese over the salad and gently toss. Add croutons and pepper to taste. Serve immediately.

Tender Three-Packet Beef

While Memorial Day weekend is usually all about grilling and opening up the pool for the summer, it seems the weather doesn’t necessarily feel like cooperating this year. After a beautiful morning sunrise, yesterday’s weather turned cloudy and a bit chilly. Instead of grilling, as I had planned, I popped a roast into the crock pot and headed outdoors to spruce up the backyard. This recipe couldn’t be any easier to prepare. I always keep these seasoning packets in the pantry for when I’m in the mood for a no-hassle meal. This is one of the most tender and flavorful roast recipes that I have ever tasted.

Tender Three-Packet Beef

3-5 lb. beef roast
2 cups of water
1 packet brown gravy mix
1 packet ranch dressing mix
1 packet Italian seasoning mix

In a mixing bowl, combine water with the three seasoning packets. In a lightly sprayed crock pot*, place roast beef. Pour seasoning mixture over the roast and cook on low for 6-8 hours.

* I use a 6 quart crock pot for a 5 lb. roast.

Spicy Slow Cooker Buffalo Chicken Sandwiches

Three simple ingredients, one delicious sandwich! If you like spicy, this sandwich is for you. On chilly fall mornings, when we head off to the Northwestern or Purdue University football games, this is one of our favorite take-alongs. I just unplug the crock pot and pack this deliciousness into the back of the car.
Yesterday, after days of warmer than usual weather, the skies turned gray, the heavens opened up, and the strong winds brought a stiff chill to the air. It reminded me so much of a fall morning, I pulled out a few chicken breasts and plugged in the crock pot. By the time the kids came home from swim practice, the chicken was done and the sandwiches were ready. That’s my kinda meal!

Spicy Slow Cooker Buffalo Chicken Sandwiches

6 chicken breasts, boneless/skinless
1 stick of butter or margarine
1 12 oz. bottle of Frank’s Red Hot Original Cayenne Pepper Sauce

Place the stick of margarine or butter in the bottom of a 4-6 quart crock pot. Then add the chicken breasts. Cook on low setting for 6-8 hours, covered.
When chicken is thoroughly cooked and quite tender. Shred the chicken with two forks. Pour in the bottle of Frank’s Red Hot sauce and combine well. Serve on your favorite sandwich rolls.

Tender Homemade Tortillas

Just last week, I posted a recipe for Favorite Taco Seasoning Mix so I thought I would share my recipe for Tender Homemade Tortillas as well. I use a tortilla press when making these little gems. Cut a plastic bag down the side seams but leave the bottom of the bag intact. Use the plastic bag to line the tortilla press. This makes clean up super easy and will help remove the flattened dough from the press without breaking the tortilla.
Making tortillas from scratch is fun, quick, easy and economical. Keep a bag of Maseca or masa harina in your pantry so that you can easily make a dozen or so in a very short period of time. Once you try the tasty and tender texture of these tortillas, you’ll be so satisfied, you won’t want to go back to the store bought brands.

Tender Homemade Tortillas

1 3/4 cup of masa harina
1 1/8 cup of hot water

In a medium bowl, mix together the masa harina and hot water. Kneed until pliable and smooth. If the dough is too dry, add more hot water, until dough is easy to kneed but not sticky. Let dough sit for 30 minutes, wrapped in plastic wrap.
Preheat a skillet or griddle pan set to medium-high heat. Divide dough into golf-sized balls. Press each in the tortilla press lined with plastic wrap or prepared plastic bag. Carefully remove the tortilla from the press and place on the hot griddle for 30-40 seconds per side. Transfer to a plate and cover with a towel to keep them warm and moist before serving.

Curley’s Corned Beef Hash

A tradition in our household when my husband and I were first married, was to head over to my mother-in-law’s house for Sunday breakfast. When we arrived, the smell of freshly brewed coffee filled the air. Gramma Curley would have on her apron as she filled plates with piles of pancakes, pastries, scrambled eggs and various meats. On one occasion, she poured a reddish meat and potatoes mixture from a small pot onto a plate and my husband’s eyes lit up. I asked what it was and he replied, “It’s corned beef hash”. Well, I had never seen anything like it before. Coming from an Irish family, you would think that I would have known what corned beef hash was. After tasting it, I knew that I had to come up with a recipe of my own. This stuff just wasn’t happening for me. Here is a little something I put together one night with left over corned beef, some shredded cabbage, onions and a few baked potatoes. Give this recipe a try…you won’t be disappointed.

Curley Corned Beef Hash

1 pound fully cooked corned beef, diced
1 cup shredded cabbage
1 medium onion, sliced thinly
3 left-over baked potatoes, sliced or diced
1 tsp garlic powder
1 tsp onion powder
3 tbls. canola oil

Pre-heat a medium skillet on the stove top , add canola oil and saute potatoes until golden brown. Add shedded cabbage and onions. Season with garlic and onion powder; saute until slightly soft. Add cooked corned beef and continue to saute until heated through; about 15 more minutes. Serve it up hot with some Irish Soda Bread. This is a great one pot meal.

Curley’s Baked Corned Beef

When I was a young girl, my parents cooked corned beef quite frequently. My dad would find a big pot, throw in the corned beef, add cabbage, potatoes, and parsnips and cover the whole thing with water. He would set the big pot on the stove top and let the concoction cook for several hours. The result was a mess of stewed vegetables in greasy water and a piece of meat that was a quarter of the size it once was. Needless to say, this was not my favorite meal and I would cringe when I would smell the aroma as I walked in the door from school.
These days, I have found a much better way to prepare corned beef. You will love this recipe. The beef is tasty and slices up well for sandwiches. Once you make corned beef this way, you’ll never boil it again.

Curley’s Baked Corned Beef

1 3-5 lb. flat cut of corned beef ( I like Vienna’s)
2 cups water
1/3 cup Lawry’s Teriaki Marinade

Line a 13×9 baking pan with aluminum foil and spray with cooking spray. Rinse corned beef and place in pan. Pour water into pan. TIGHTLY COVER PAN WITH ALUMINUM FOIL. Bake at 325 degrees for 3 hours. Remove from over and carefully remove the foil. The steam releasing from the pan can burn your fingers if you are not careful. Brush the marinade onto the corned beef and place it back in the oven for 10 minutes. Enjoy with sautéed potatoes and shredded cabbage.
