This blog is meant to serve as a recipe diary for my children, extended family and maybe even a few friends. I hope to share a variety of recipes…whether they be favorites that my family has enjoyed for years or new concoctions that we have recently adopted. It is my hope that my children will cherish these recipes/projects and be blessed to one day share them with future generations.
My passion for cooking began in college where I studied what was then called Home Economics. Later, I earned my Master’s Degree in Human Development and Family Sciences. Growing up in an Irish household, our regular nightly meal consisted of the basic three…meat, mashed potatoes, and green vegetables. These delicacies were cooked until they could be cooked no more… always well-done!
Working in various restaurants throughout my college years, I learned that there are so many other food choices to explore. Over the years, I’ve collected cookbooks and recipes, entered and won several cooking/baking contests, and perfected several really great recipes that I look forward to sharing.

Yesterday you commented on my blog, so here I am today, visiting. I am beginning to wonder if we are twins separated at birth. I majored in Home Economics and my Master’s is in Early Childhood Education. I am also from an Irish family where dinners were as you said, mashed potatoes, green beans and usually red meat. I married into a Polish family where the cuisine was much different and more creative!

Love your zeal. I wish I could eat with abandonment but age does not allow it. Have to watch my weight, my calories, my salt intake and sugar is a no-no. But I can read and I can dream.

You are not alone…I too, stay away from sugar and high carbs. My children are student athlete swimmers and are able to eat as they like. They practice before and after school, 5-6 hours per day. I love to cook so I make plenty of goodies but can’t eat them. Thanks for your comment! Keep dreaming!☺️

Home made peanut butter! I hadn’t thought of using my blender, seems silly now I think of it. I am going to have a go! Peanut butter, jam and french toast sounds culturally far away from the british taste buds….but sounds and looks fantastic. I’ll make my peanut butter then crack on with the french toast!

Oh, you’ve got to try it! Delicious! Yes, a powerful blender or food processor both work great for peanut butter. You will have to pulse the motor at first and then let it whirl for a good long time until all the peanuts are smooth and creamy. We love it! Let me know how it works for you! –Linda
