Applesauce Baked Oatmeal

Last Saturday, we spent the day harvesting apples from our trees and canning batches of organic spiced applesauce to enjoy throughout the year. There’s something especially satisfying about preserving the flavors of the season and knowing we’ll be able to enjoy them long after the apple harvest is over.
One of our favorite breakfasts on chilly mornings is baked oatmeal, and this Applesauce Baked Oatmeal has become a family staple. The applesauce adds a wonderful burst of warm apple flavor while replacing the oil found in many traditional baked oatmeal recipes, making it a wholesome and delicious option.

For this batch, I used dried cherries, but the recipe is incredibly versatile. Feel free to substitute your favorite dried fruit, such as raisins, cranberries, apricots, or blueberries.

I like to keep the baked oatmeal covered in the refrigerator, making it easy to reheat portions throughout the week. Served warm with a dollop of yogurt or an extra spoonful of applesauce, it makes a comforting and nourishing breakfast on busy weekday mornings.

Applesauce Baked Oatmeal

3 cups old fashioned rolled oats
2/3 cup brown sugar
1 tsp salt
2 tsp baking powder
2 tsp ground cinnamon
2 eggs
1/2 cup applesauce
2 tsp vanilla
1 cup milk
1/2 cup dried fruit (optional)
1/2 cup pecans, chopped (optional)


Pre-heat the oven to 350 degrees. In a large bowl combine the oatmeal, salt, baking powder, brown sugar, and cinnamon.
In a separate bowl blend the eggs, applesauce, vanilla and milk. Then add to the oatmeal mixture and thoroughly stir.
Pour the oatmeal mixture into a greased 11 x 7” pan and bake for 35-40 minutes. Serve warm.
