Hearty Oatmeal Pancakes with Homemade Maple Flavored Syrup

For the last several days, we have been experiencing record-breaking low temperatures in our part of the world. On the positive side, forecasters had given us plenty of warning, so I was able to head out to the local stores last week to stock up on lots of food before the arctic blast set in. All in all, I did pretty well. I purchased lots of fresh fruits and vegetables, plenty of oatmeal and other breakfast items, baking supplies to make fresh bread and a few goodies for my home bound troops.
Yesterday, M pulled out our set of Mickey Mouse egg rings and asked if we could make pancakes for breakfast. The rings are meant to mold eggs into the curved shape of a Mickey Mouse head but we usually use them to shape pancakes. We whipped up a batch of our tasty, satisfying Hearty Oatmeal Pancakes before heading out into the blizzard-like conditions to shovel the newly fallen snow.

After dropping the first batch of batter into the molds, I checked to see if we had an ample supply of maple syrup for the pancakes. To my dismay, we only had a drop of syrup left in the bottle. “No problem”, I said to myself… “I will make a batch of my own maple syrup”.
I had discovered this recipe last year, around the Thanksgiving holiday, when we had sleep-over guests and had run out of syrup. I quickly scoured my cookbook collection for an appropriate substitute. I ended up making this adapted recipe and I also heated some of our Homemade Concord Grape Jam to act as a flavorful, delicious, topping as well.
I keep the syrup recipe close at hand for we always seem to be running out of maple syrup in this house. Enjoy the recipes and stay warm!

Hearty Oatmeal Pancakes

1 cup old fashioned oats
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
2 eggs, lightly beaten
1 1/2 cups milk
1 teaspoon almond extract
1 teaspoon vanilla extract
1/4 cup canola oil

Combine oats, flour, sugar, baking powder and salt in a mixing bowl. In a separate bowl, combine eggs, milk, oil, and extracts. Stir into dry ingredients; just until moistened. Pour batter onto lightly greased, hot griddle. Flip pancakes when bubbles form on top of pancakes. Continue to cook until second side is golden brown.

Homemade Maple Flavored Syrup

1 cup water
1 cup sugar
1 cup brown sugar
1 tablespoon maple flavored extract
1 teaspoon butter flavored extract

Bring the water, sugar, and brown sugar to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and stir in the maple and butter flavored extract; simmer 3 minutes longer. Serve warm. Refrigerate remaining syrup.

Sweet Italian Dressing

I’ll bet that you have noticed that I post loads of recipes for sweet delicious baked goods on a regular basis… What you might not know is that I don’t eat any of them. They are all lovingly made for family and friends, but I stay away from them completely. You see, several years ago, I decided to give up eating carb laden goodies with lots of sugar. Oh, I still enjoy the sweet taste of sugar but I have found some great substitutes over the years. A few of my latest favorites are monk fruit extract, stevia in the raw, or coconut palm sugar.

Sure, there is quite a bit of controversy circling artificial sweeteners, but these are the few I choose that seem to work for me. When I’m looking for something sweet, I engineer things for myself so that the carbs are low and the fiber content high.
A sweet revelation…
This salad recipe idea came to me after having a similar salad at a recent Christmas party. It was a carry-in party where my co-workers and I were asked to bring beverages, salads, side dishes and desserts. One of my co-workers brought in a fabulous pre-made salad that she bought at Cosco. There were 7 different greens, sunflower seeds, pepitas, and dried cranberries. A pre-made dressing was included. Everything delivered in a sizable package. Here’s the kicker…all for just $5.00.

Well, I went back for seconds…and thirds on the salad. I raved about it all afternoon. It’s called the Sweet Kale Vegetable Salad Kit. It’s made from a blend of kale, broccoli, shaved Brussels sprouts, green cabbage and chicory. Seven “super greens” are blended within the salad to provide a wide variety of textures and flavors. One drawback here…is the dressing. My taste buds are highly sensitive to the sweet taste of sugar and I tasted a lot of it in the pre-made poppyseed dressing. The other drawback…I don’t live near or have a shopping card for Costco.
So, I did the next best thing…I made my own salad. It’s a bit different because of the availability of some of the salad items in my grocery store. When I priced out the cost of purchasing all of the different “super greens” needed to make the salad, the bill really added up quickly. My next idea meant looking for salad blends that had been prepackaged to save a little “green”. I found a blend made with broccoli stalks, red cabbage, romaine lettuce, and green onion. I found another mix with mini kale and Brussels sprouts so I combined the two. Then, instead of the poppy seed dressing, I added my own sweet Italian dressing and topped the salad with 1/4 cup of finely diced lean meat and a light sprinkle of shredded mozzarella cheese. I often add sunflower seeds, walnuts, or slivered almonds.
The Sweet Italian Salad Dressing is sort of a copy cat recipe of the Olive Garden salad dressing recipe. The important thing here is to find a mix of greens that you enjoy that are packed with vitamins and nutrients, lots of texture and flavor. Chop the greens up finely, mix in a little of your favorite dressing, add a few flavorful toppings and eat more vegetables!

Sweet Italian Salad Dressing

1/4 cup red wine vinegar
3 tablespoons water
1 (2/3 ounce) package Good Seasons Italian dressing
1/2 cup olive oil
1/2 cup sugar or 2 packets sugar substitute

Combine all ingredients. Shake vigorously. Store refrigerated in an air-tight container.

Christmas Treasure Hunt in a Jar

This is a great kid-friendly Christmas gift for those of you looking for a few last minute ideas. The Treasure Hunt in a Jar can be made with a theme in mind… Make them for holidays, sports fanatics, those that like to craft, sew or bake. Find trinkets at the dollar store or your local craft store to match your theme. I am always amazed at how interested guests are in finding all of the hidden trinkets in the jar. Most times, there are a few people patiently waiting for their turn at finding all the treasures.

This is a also great little craft project that can easily be made for a fundraising activity. Your group can make several of them to sell at local craft fairs or community fundraisers. Weeks before the event, ask everyone to gather up items to be recycled or repurposed for the project. Collect used jars of all shapes and sizes, lots of small “treasures” to place in the jars, and a big bag of bird seed. This is an ideal project for both the young and the old. Don’t be surprised if the jars sell out quickly. Your group will be quite proud of their accomplishment!

A Treasure Hunt in a Jar

Recycled jar with tight fitting lid
Bird seed
Found objects to place in the jar like a…
penny
nickel
safety pin
bobby pin
rubber band
macaroni
marble
paper clip
bead
tack
toothpick
red button
screw
bread tie

Make sure jar is thoroughly washed, clean and dry. Pour bird seed into the jar, filling only half-way. Place “treasures” into the jar. Now, continue to fill the jar with bird seed; about 3/4 full, leaving enough space for items to move while searching for treasures. Cover jar, tightly securing the lid. Print up a “treasure” item list and the following saying on colorful card stock or scrap book paper and attach to the jar with a ribbon.

Fresh Garden Vegetable Dip

Lately, the local farmer ‘s market is filled with a bounty of fresh fruits and vegetables. Broccoli, carrots, and celery, are all quite inexpensive and take little effort to prepare for a quick summer snack. My own garden is coming along well but not quite ready to harvest. Looking over my plants, I see that the cucumbers, squash, celery, and tomatoes are all doing well but have a long way to go before they will be ready for picking. Thanks to soft, plentiful rain showers and lots of sunshine, this year’s garden looks strong and healthy. Although, last year’s garden was a complete flop. The drought in my area caused many gardeners to give up on the garden all together. I pulled out this recipe today as I am sure we will be reaping the benefits of our labor soon. I really enjoy the taste of this dip compared to that of the store bought powdered mix. All of the ingredients are common pantry items and the dip can be thrown together with little effort. It’s smooth, creamy, and flavorful and can be used on salads, for chips, or as a vegetable dip.

Garden Fresh Vegetable Dip

1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/2 teaspoon dried dill weed
1/2teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper

Whisk all ingredients together in a medium bowl. Cover and chill for 1 hour before serving. Great for chips and vegetables.

Best Basic Muffin Mix

This morning, I whipped up several batches of muffins for my family. The girls love basic blueberry muffins, while the boys crave muffins with chocolate chips. In order to save time, I double my basic muffin mix recipe, split the batter in half, and mix in additional ingredients to personalize the muffins. So, for the girls, I used the basic muffin mix recipe and added almond extract and fresh blueberries. For the boys, I added chocolate chips and vanilla extract. What a time-saver! More importantly, everyone is happy! This is my “go-to” basic muffin recipe mix.

Best Basic Muffin Mix

2 cups flour
3 teaspoons baking powder
3/4 teaspoon salt
3/4 cup sugar
1 egg, lightly beaten
1 cup milk or buttermilk
1/4 cup canola oil

Pre-heat oven to 400 degrees. Prepare muffin pans by adding paper or silicone liners. In a large bowl, combine together dry ingredients; mix well. In a separate bowl, mix egg, milk, and oil; just until moistened. Do not over mix. Pour batter into individual muffin cups. (I use an ice cream scoop to distribute evenly.)

From here, you can fold in additional desired ingredients.

1 cup blueberries and 1/2 tsp almond extract
1 cup chocolate chips and 1 tsp vanilla
1 cup chopped apples and 1 tsp cinnamon

My Little Secret Steak Seasoning Mix

This week, a local market had a great sale on lean steaks so I bought a boatload of them…some to freeze and some to season and grill. Yesterday, after a local charity run and a beautiful day, I fired up the grill for a delicious steak dinner.
I used to buy expensive pre-mixed meat seasonings but soon realized that mixing my own seasonings was certainly more economical but also so much better when tailored for my families taste. This “secret” recipe is a bit like a Montreal steak seasoning and it makes meats tender and flavorful with a bit of a spicy twist. Sprinkle the seasoning on anything that you might be grilling. I’ve even sprinkled it on grilled pineapple and peaches. …So good!

My Little Secret Steak Seasoning

2 teaspoons kosher salt
2 teaspoons hickory smoked sea salt
4 teaspoons paprika
2 1/2 teaspoons ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1/2 teaspoon coriander
1/2 teaspoon turmeric

Mix all seasonings together and store in a tightly lidded container in a cool, dry place. Use as a rub for steak, pork, chicken, and shrimp. Sprinkle over grilled fruit or vegetables.

Favorite Taco Seasoning Mix

As many in the area will be celebrating Cinco de Mayo this weekend, I thought it appropriate for me to share my “go to” taco seasoning mix recipe. I found this recipe shortly after I was married. I was tired of the salty packaged mixes found in the grocery store. Living in Chicago, we were used to visiting authentic Mexican restaurants like Lindo Mexico and El Jardin. I wanted to find a recipe that mimicked the flavor that I was tasting in the restaurant.
This recipe is adapted from an old cookbook that I use religiously. If you could see the stains on the pages of this cookbook, you would get a sense for its continuous use. I always triple the recipe and store the mixture in an old mason jar with a tight fitting lid. This way, I have plenty on hand when throwing together a quick meal. Use this seasoning for tacos, nachos, or for a tex-mex dip. Once you try this mix, you’ll never pay for the pricy,salty, packaged mixes again.

Favorite Taco Seasoning Mix

2 teaspoons instant minced onion
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon cornstarch
1/2 teaspoon crushed dried crushed pepper
1/2 teaspoon instant minced garlic
1/4 teaspoon dried oregano
1/2 teaspoon ground cumin

In a small mixing bowl, combine all ingredients, stir to combine.
Package in a ziplock plastic bag or in a recycled jar. Store airtight in a cool, dry place. Makes the equivalent to one seasoning packet.

To use : Brown 1 lb. lean ground beef in a skillet, drain well. Add taco mix seasoning and 8 oz. water to the ground beef. Heat gently to develop favors, stirring occasionally. Makes filling for 8-10 tacos. Top tacos with guacamole, shredded cheese, lettuce, salsa, and sour cream (optional).
